Step 1: Finely shred the red cabbage and make sure that the pieces are not too long. Put the shredded red cabbage in a large sauce pan. Step 2: Pour the vinegar in the sauce pan, turn on the heat and let it simmer for about 30 minutes. Stir in the cabbage regularly so that it doesn't burn to the bottom of the sauce pan.

Peel the outer, coarse leaves of the cabbage, and cut it finely without taking the stalk. Melt the butter in a large saucepan and add the sugar, vinegar and currant juice. Put the cabbage in the pan, put the lid on and let the cabbage steam tender on low heat for approx. 1 hour time. Stir a few times in the pan along the way.

Remove outer leaves of cabbage, cut into quarters, remove the tough white core and discard. Slice cabbage into desired thickness. Place cabbage into cooking pot and add vinegar, juice, sugar, salt and ground cloves. Let it simmer covered for 3 hours, stirring occasionally. At the end of cooking time add the butter and gently stir until melted.
